Here is my plan for dinner this week, assuming Baby Bear doesn't make an early arrival. One week to the due date!
Day One
Spinach, bacon and mozzarella calzones
We love our homemade calzone dough!
Pizza/Calzone Dough
1 1/2 cups water
1 1/2 Tbs olive oil
3 3/4 cups bread flour
1 1/2 Tbs sugar
1 1/2 tsp salt
2 tsp rapid rise yeast (or 1 1/2 tsp regular yeast)
Mix together in a standing mixer or add to bread maker on the "dough" setting.
Day Two
Shrimp and grits from Coastal Living
with creamed corn from Southern Living
We may live in Minnesota, but we love good Southern recipes.
T promises the creamed corn recipe is just like his grandmother's.

Blessings on your kitchen this week!
Blessings to you in your final days of "cooking"--in more ways than one! Wish I was there to make you a meal upon baby bear's arrival. How blessed that will be! We're praying for you. xox
ReplyDeleteHi B, it's Elena from P-ton! I came across your blog (which I thoroughly enjoy reading) through Building Cathedrals. Just wanted to send you a note that you, the baby, and your family are in my prayers. God bless you all! (PS -- I love your Grocery Bag ideas. Here's a simple Peanut Noodle recipe that your family might like, http://www.101cookbooks.com/archives/lazy-day-peanut-noodle-salad-recipe.html)
ReplyDeleteForgot to mention that substituting spaghetti for soba and chicken for tofu work great, too.
ReplyDeleteElena, We will LOVE this recipe, thank you so much for passing it on. Look for it in a future Grocery Bag! Such a wonderful blessing to know you are checking in on us. Thank you for your prayers!
